
This is a recipe from the Peace Corps Morocco : Kitchen Guide
for Chocolate Pudding Cake.
I ended up baking this because I was out of butter but my husband had requested I bake a cake – so I pulled out the kitchen guide and voila – there was a recipe that did NOT need butter!
Its super simple to make and really yummy to eat!
Ingredients –
1 cup flour 2/3 cup sugar and an addition 2/3 cup sugar
4 Table Spoons cocoa powder and an addition 2 Table spoons cocoa powder
2 teaspoons baking powder
1/4 tsp cinnamon 1/4 tsp salt 1/2 tsp instant coffee like NesCafe etc
1 pkg of vanilla sugar or use a teaspoon of vanilla powder
1/2 cup milk 1/4 cup oil
1 cup warm water
Instructions –
Preheat oven to 350F
Mix all dry ingredients except the addition 2/3 cup sugar and 2 Table spoons of cocoa powder.
Add milk, oil and mix well.
Pour batter into a greased pan.
In a small bowl mix the left over sugar and cocoa powder.
Sprinkle evenly over the batter.
Pour the warm water over the top – *** Do NOT Stir or attempt to mix the water in!**
Bake 30 minutes and serve warm!

That reminds me of a recipe I’ve used for years from the King Arthur Flour cookbook. They’ve got some really nice variations, like leaving out the cocoa and adding some shredded carrot.
